I am always on the hunt for a good popcorn recipe...speciality popcorn prices are ridiculous so I make them at home, and have found some fantastic ones this year.
But specifically, I am watching my weight with this pregnancy- and found this site not only so helpful but the recipes are really really good, especially the ranch.

So thought I would share.

Southwestern meal.
Southwestern Spiced Popcorn
Makes 4 servings

PointsPlus value per 2-cup
serving: 2 (note: a 1-cup serving has a PointsPlus value of 1)
Ingredients

8 cups air-popped popcorn
Nonstick spray
2 tsp chili powder
1 tsp ground cumin
1 tsp paprika, preferably smoked paprika
1 tsp salt
1/2 tsp garlic powder

Instructions

Place popcorn in a large bowl; spray with nonstick spray, tossing well.
In a small bowl, stir together the chili powder, cumin, paprika, salt and garlic powder. Sprinkle over the popcorn, tossing all the while, until well coated.

About Cinnamon-Spice Popcorn
Perfect for a chilly evening, consider serving this treat with warm cider or tea.
Cinnamon-Spice Popcorn
Makes 4 servings

PointsPlus value per 2-cup

Ingredients

8 cups air-popped popcorn
2 sprays cooking spray
1/4 cup powdered sugar
2 tsp ground cinnamon
1/4 tsp ground or freshly grated nutmeg
1/4 tsp ground allspice
1/4 tsp table salt

Instructions

Place the popcorn in a large bowl; spray with nonstick spray, tossing well.
In a small bowl, whisk together the powdered sugar, cinnamon, nutmeg, allspice and salt. Sprinkle over the popcorn, tossing all the while until well coated.

About Parmesan-Thyme Popcorn
For the best taste, use real Parmesan cheese, stamped Parmigiano-Reggiano on the rind and available in chunks at most supermarkets; grate it with a microplane or through the small holes of a box grater.
Parmesan-Thyme Popcorn
Makes 4 servings

1/4 cup finely grated Parmigiano-Reggiano
2 tsp dried thyme

In a small bowl, mix together cheese, thyme, garlic powder and salt.
Place hot popcorn in a serving bowl and coat with cooking spray; sprinkle with cheese mixture, tossing all the while until well coated.

About Greek-Spiced Popcorn
Take an easy trip to the Aegean with this savory popcorn. You might even search out Greek rosé wine, a nice complement and an unusual treat. Look for dried, ground lemon peel in the spice aisle of your market.

In a small bowl, whisk together the dry buttermilk, salt, onion powder, dry mustard, garlic powder and pepper. Sprinkle over the popcorn, tossing until well coated.

Mmmmmm...these sound YUMMY! Gonna have to try them soon!

I have a couple popcorn recipes that my family loves...but they are NOT diet...sorry.

Chocolate Popcorn

Pop about 4 quarts of popcorn; keep in oven to keep warm.

2 C sugar
3/4 C milk
1/3 C unsweetened cocoa
dash of salt
1 tsp corn syrup
3 T butter or margarine
1 tsp vanilla

Cook sugar, milk, cocoa, salt and syrup together. Just before hard ball stage (hard ball stage is 265 degrees F), remove from heat, put in butter and vanilla. Then pour over popcorn. Mix until well coated.


Karo Crazy Crunch

2 qts. popped popcorn
1 1/3 C pecans (halves, pieces or chopped)
2/3 C almonds (slices work best)
1 1/3 C sugar
1 C butter or margarine
1 tsp vanilla
1/2 C Karo Crystal Clear corn syrup

Mix popcorn and nuts on cookie sheet. Combine sugar, butter and Karo syrup in 1 1/2 quart pan. Bring to a boil over medium heat, stir constantly. Boil 10 to 15 minutes (stir occasionally) or until mixture turns light caramel color. Remove from heat. Add vanilla. Pour over corn and mix well.
Spread out to harden. Break apart.

***note*** If I remember correctly, these recipes are similar to peanut brittle in that they turn out better if there isn't much humidity in the air when you make them.

oh those look really good....i can see making those for the holidays when dieting doesn't work anyhow!
thanks karen- i printed them and added them to my popcorn recipes!
