Don't mess with the disc. Adjust your DVD player to have English "always on".

turning the subs as default on is really just an entry in the ifo file (I assume were are tlaking about dvd_ .Easy enough to mess with (and easier if you input the disc in dvdremakepro), but if your player will obey the command of subs always on then stick with that
